They are all providers you should run, they cover all aspects of protection;

Instant Messaging, if you use MS Instant Messages, AOL, Yahoo or whatever AVAST will check for anything dodgy if a file is sent.
Internet Mail, AVAST will scan all messages before they get to your mail client.
Network Shield, don't mistake this for a firewall because it isn't, this just protects you from various malware probes etc.
P2P Shield, if you use bit torrent etc this will check the incoming files for dodgy things
Standard Shield, this protects your computer at a hard disc level, scanning new files that are created on the harddisc.
Web Shield, This scans webpages before the get to your computer incase there is anything dodgy on them.

The missing provider is;

OutLook/Exchange - this will only be run if you are connected to an Exchange server.
